Recipes - Crispy fried ginger and garlic
Garlic is eaten throughout most of South Asia as a food and flavouring. This recipe makes a delicious, crunchy garnish for savoury dishes. Serves 4 to 6 as a garnish.
Ingredients
5 cm piece fresh ginger root (peeled)
Bulb of garlic, separated into cloves and peeled
4 tablespoons vegetable oil

Instructions
1. Slice the ginger root and garlic cloves very thinly.
2. Heat the oil in a pan and add sliced ginger and garlic, fry until golden brown and crisp.
3. Blot on kitchen paper and keep aside until ready to use.
